Over at StartCooking.com you’ll find an interesting recipe, from Emeril, for making ‘healthier’ french fries. Here’s the jist: fries coated with seasoned egg white and then oven baked. They certainly look tasty enough.

have you tried making these healthy fries yet Dr. Spaceman?
For my ‘healthy’ fries, I usually just toss them with olive oil.

That’s what I’ve been doing lately…I throw on some seasoned salt as well…very good!
We’ve almost totally switched over to sweet potato fries…I toss’em in canola oil. Haven’t tried egging them!!
